The clever ISO Auto Control setting allows you to set a maximum sensitivity (up to 6400) and a minimum shutter speed (1/30th is a good starting point), with the camera over-riding your ISO choice if it thinks you're being too ambitious whilst maintaining a shutter speed that won't introduce camera shake. The Auto Mode Selector Lever Switch between auto and manual modes. The normal sequence of slower exposure times is 1/30, 1/15, 1/8, 1/4, 1/2 and 1 second. On the dial I'd expect them to be marked 30,15,8,4,2,1 T, B - that is what is on my X100V and what I can remember from the XT5 manual. Edit: T and B settings are for long exposure times - that is (much) longer than 1 second.
For night, I use 400-6400 ISO with a minimum shutter speed of 1/160 then adjust the aperture if more light is needed. Like the previous auto, you could set a lower shutter speed for more light since you have OIS and maybe you have steadier hands than me. I typically shoot while walking or only stopping for a few seconds.
